1:00 - 1:45 pm Outdoor Tent - Easy Tea Mocktails (Arika Kimsey)

This course will provide samples of both hot and chilled mocktails for students to test out (remember to bring your 2026 TeaFest cup!), along with recipe cards of each mocktail provided to take home. Attendees will participate in an in-depth discussion on what teas can work best for each mocktail and why, and how to adjust recipes to their taste preferences.

Although you can certainly use herbals to make a mocktail, this class will focus on using only product from the camellia sinensis plant.

  • My interest in tea began in 2006, since then I've had a voracious interest in tea. I've been attending TeaFestPDX since 2017, and look forward to learning something new every year.

Because I enjoy ordering different brands and blends, I do sometimes end up with varietals I don't care for. Which is what many of these Tea Mocktails origin stories came out of. Eventually It moved from a way to use up tea I wasn't that fond of, to becoming a creative outlet and a way to elevate tea in a way that even non-tea drinkers enjoy.
