In this talk, Jorge Rizo will guide you through the story of tea in Mexico, since tea arrived in the 18th century. We will discuss the characters surrounding it, maps, art, teaware and the places where tea was served, from early 20th century social clubs to restaurants, confectioneries, and tea salons. We’ll also explore how Mexico’s silver trade with China helped shape tea’s presence in the country, and how tea evolved alongside beloved local drinks like chocolate and pulque.

Jorge Rizo is a Certified Tea Sommelier specializing in tea research and cultural education. I study the historical and social contexts that shape tea traditions worldwide, with a focus on sensory evaluation, pairing, and immersive gastronomic events. I advise restaurants, museums, and private collections on tea programs and the interpretation of historic teaware. For me, tea is a living art, rooted in tradition, always evolving, and endlessly deep. I’ve contributed through published research on tea history in Mexico and interviews with authors and experts globally. Trained through master classes in Kyoto (Japanese tea ceremony), Munnar (harvesting/processing), and Hangzhou (Gongfu Cha).
