This class will cover fermented tea in a form you’ve likely never seen before. Third wave kombucha is about elevating tea and herbs in the same way wine makers transform their grapes. Learn the techniques and characteristics of brewing tea “proxies” and how tea is becoming one of the biggest influences in NA beverage. Accompanied by a “wine tasting” of select fermented teas.

I’ve been in love with tea and tisanes since I was a child. At some point I realized that my love for tea and my love for ferments had a major crossover, kombucha. Now my goal is to advance fermented tea as a new craft, one with even more possibility than wine. Every day I study and enjoy tea’s own styles, aromas, terroirs, and cultivars to scout them for fermentation.Please note that all ticket purchases are non-refundable.
